White Beans and Asparagus with Charred Lemon

Ingredients:
  • 1 bunch of asparagus, trimmed

  • 2 cans (15 oz each) white beans (such as cannellini or Great Northern), drained and rinsed

  • 2 cloves garlic, minced

  • 2 tablespoons olive oil

  • 1 lemon, sliced

  • Salt and pepper to taste

  • Red pepper flakes (optional)

  • Fresh parsley, chopped, for garnish

Instructions:

1. Char the Lemon:

  1. Heat a grill pan or skillet over medium-high heat.

  2. Place the lemon slices in the pan and let them char for about 2-3 minutes on each side until they are lightly charred and fragrant. Set aside.

2. Cook the Asparagus and Beans:

  1. In the same pan or skillet, add 1 tablespoon of olive oil.

  2. Add the trimmed asparagus to the pan and cook for about 5-7 minutes, stirring occasionally, until they are tender-crisp and slightly charred. Remove the asparagus from the pan and set aside.

  3. In the same pan, add another tablespoon of olive oil if needed. Add minced garlic and cook for about 1 minute until fragrant.

  4. Add the drained and rinsed white beans to the pan. Cook for 3-4 minutes, stirring occasionally, until the beans are heated through and slightly golden. Season with salt, pepper, and red pepper flakes (if using).

3. Combine and Serve:

  1. Arrange the cooked asparagus on a serving platter or individual plates.

  2. Spoon the white beans over the asparagus.

  3. Place the charred lemon slices on top.

  4. Garnish with chopped fresh parsley.
