This Asian-inspired asparagus and shrimp salad is a refreshing, healthy, and colorful dish that's perfect for a light lunch or appetizer. The combination of fresh Altar asparagus, succulent shrimp, and vibrant herbs, all dressed in a zesty sesame ginger vinaigrette, makes this salad a palate-pleaser.

Ingredients:


For the Salad:

  • 1 bunch of fresh Altar asparagus, trimmed and cut into bite-sized pieces.

  • 1 pound of large shrimp, peeled and deveined.

  • 1 red bell pepper, thinly sliced.

  • 1 cup of cherry tomatoes, halved.

  • 1 cup of cucumber, thinly sliced.

  • 1/4 cup of fresh cilantro leaves.

Instructions:

1. Prepare the Altar Asparagus and Shrimp:

  • Snap or trim the tough ends of the asparagus and cut them into bite-sized pieces.

  • Season the shrimp with salt and black pepper.
