Roasted Salmon With Asparagus, Lemon and Brown Butter

Ingredients:
  • 4 salmon fillets (about 6 ounces each), skin-on

  • 1 bunch asparagus, tough ends trimmed

  • 2 tablespoons olive oil

  • Salt and freshly ground black pepper, to taste

  • 1 lemon, thinly sliced

  • 4 tablespoons unsalted butter

  • 2 cloves garlic, minced

  • 2 tablespoons chopped fresh parsley

  • Lemon wedges, for serving

Instructions:
  1. Preheat the oven: Preheat your oven to 400°F (200°C).

  2. Prepare the asparagus: On a large baking sheet, toss the asparagus with 1 tablespoon of olive oil. Season with salt and pepper.

  3. Prepare the salmon: Pat the salmon fillets dry with paper towels. Rub them with the remaining olive oil and season generously with salt and pepper. Place the salmon fillets on the baking sheet, skin-side down, with the asparagus.

  4. Add lemon slices: Arrange lemon slices over the salmon fillets.

  5. Roast in the oven: Roast in the preheated oven for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender but still crisp.

  6. Make the brown butter: In a small saucepan over medium heat, melt the butter. Once melted, continue cooking, swirling the pan occasionally, until the butter turns golden brown and develops a nutty aroma, about 3-4 minutes. Be careful not to burn it. Remove from heat and stir in the minced garlic.

  7. Serve: Once the salmon and asparagus are cooked, transfer them to serving plates. Drizzle the brown butter sauce over the salmon and asparagus. Sprinkle with chopped parsley. Serve immediately with lemon wedges on the side.
