Ingredients:
1 bunch of asparagus
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon sugar
1 teaspoon grated ginger
1 tablespoon sesame seeds, toasted
1 tablespoon sesame oil
Salt and pepper to taste
Optional: sliced green onions for garnish
Instructions:
Start by washing the asparagus and trimming off the tough ends. Cut the asparagus spears into bite-sized pieces.
Bring a pot of water to a boil and blanch the asparagus for about 2-3 minutes, or until they are bright green and slightly tender. Immediately transfer the blanched asparagus to a bowl of ice water to stop the cooking process. Drain and set aside.
In a small bowl, whisk together the soy sauce, rice vinegar, sugar, grated ginger, sesame seeds, sesame oil, salt, and pepper to make the dressing.
Place the blanched asparagus in a serving bowl and pour the dressing over it. Toss gently to coat the asparagus evenly with the dressing.
Let the salad marinate for about 15-20 minutes to allow the flavors to meld together.
Garnish with sliced green onions before serving, if desired.
