Asparagus Salad - Japanese Style

Ingredients:
  • 1 bunch of asparagus

  • 2 tablespoons soy sauce

  • 1 tablespoon rice vinegar

  • 1 teaspoon sugar

  • 1 teaspoon grated ginger

  • 1 tablespoon sesame seeds, toasted

  • 1 tablespoon sesame oil

  • Salt and pepper to taste

  • Optional: sliced green onions for garnish

Instructions:
  1. Start by washing the asparagus and trimming off the tough ends. Cut the asparagus spears into bite-sized pieces.

  2. Bring a pot of water to a boil and blanch the asparagus for about 2-3 minutes, or until they are bright green and slightly tender. Immediately transfer the blanched asparagus to a bowl of ice water to stop the cooking process. Drain and set aside.

  3. In a small bowl, whisk together the soy sauce, rice vinegar, sugar, grated ginger, sesame seeds, sesame oil, salt, and pepper to make the dressing.

  4. Place the blanched asparagus in a serving bowl and pour the dressing over it. Toss gently to coat the asparagus evenly with the dressing.

  5. Let the salad marinate for about 15-20 minutes to allow the flavors to meld together.

  6. Garnish with sliced green onions before serving, if desired.

  7. Enjoy your refreshing Japanese-style asparagus salad!
